Shiitake - (Lentinula edodes )


Shiitake mushrooms native to East Asia, cultivated around the world for its alleged health benefits.  Fresh or dried are commonly used in the eastern Asian cuisine. It is also appreciated as a tumour agent.

Lentinan, a polysaccharide extracted from Shiitake, can prolong the survival of patients with some tumours who are undergoing chemotherapy treatment. Lentinan is a very popular medicine in Japan and China, where the treatment of some tumours by lentinan is covered by health insurance. Lentinan is found only in shiitake mushrooms.

The medicinal properties of shiitake mushrooms are attributed to the polysaccharide (sugar molecule) with so called lentinan, which has been extensively researched. Lentinan is a polysaccharide called 1,3 beta glucans. In laboratory tests, lentinan does not kill cancer cells directly, but it increases the number of aspects of the immune system that can contribute to slowing tumour’s growth. Lentinan also kills viruses and microbes directly as the laboratory studies show.  Most studies involving lentinan include intravenous or intramuscular injection.

From a dietetic point of view, it is a very valuable nutrient because of low caloric value, content of quality polysaccharides and other valuable trace elements.  It contains a lot of proteins (18%), vitamins (B1, B2, B3 and B12, D2) and minerals: potassium, calcium, magnesium and phosphorus.  It also contains all eight essential amino acids in an ideal ratio. It has been proven that regular shiitake consumption helps to lower blood cholesterol, high blood pressure, strengthens the overall defences of the organism against viral diseases. Some foreign studies also indicate that regular consumption of shiitake acts against cancer (contains the active substance LENTINAN - the glucan that has immunostimulatory, anti-infective, anti-tumour and radioprotective effects). Shiitake is beneficial in fighting perhaps all civilization diseases. Just like the sea weed, it binds heavy metals such as mercury, lead or strontium.  As result of studies made in the 1970s in Japan, many countries include extracts from these fungi as a part of treatment to reduce the toxic effects of chemotherapy.

Shiitake is widely used in Oriental and European cuisine, especially as supplement during reducing, macrobiotic and vegetarian diets.  It is low in energy, but high in nutrients. It's filling, but you do not have to worry about weight gain. Traditionally, shiitake mushrooms are mostly consumed in Japanese cuisine. They are used for the preparation of soups, sauces, rice, for flavouring meat dishes (an excellent addition to chicken and rabbit meat) or vegetable dishes. However, you must remember that the longer you heated it, the less valuable substances retain it. Soak the mushrooms for a few hours before use.

Shiitake has a significant effect on immunity. One of the substances that shiitake contains, is lentinan. It is glucan, which was introduced in Japan as a standard part of the treatment of some oncological diseases. It has an immunostimulatory, anti-infectious (eliminates swine, bacterial, fungal and parasitic infections) diseases), antitumor and radioprotective effects. It´s also proved successful at treatment and prevention of acne. In addition to the activating effect on the organism, it traps free radicals and acts as antioxidant. Free radicals come from bad eating habits and overconsumption foods with conservation of the substances. Glucans are suitable for correcting free radicals from food. Glucans reduce the level of excess in substances from nutrition (cholesterol) and excess in hormones (for physical and mental load), lower the risk of high blood pressure, strengthen the overall defences of the organism against viral diseases. Shiitake has anti-fungal, anti-tumour effects, stimulates the immune system, improves liver activity. In Japan, the concentrated extracts from the mycelium of Shiitake are called Lentinan, or LEM.  These are anti-tumour preparations used for treatment of tuberculosis, fatigue syndrome, bronchitis, hepatitis and act against HIV virus. Japanese scientists have discovered that eating Shiitake mushrooms increases activity of immune system, macrophages, NK cells, T and B lymphocytes, increases the level of interferon.

Shiitake is known for its rare healing effects, especially for upper airways, bad blood circulation and liver problems. Shiitake has a healing fungus natural antibacterial effects and helps in the treatment of ulcers and gastric problems. In Japan, Korea and China, it has been known for more than thousand years as a medicine and food supplement. In the treatment of people affected by the bomb explosion in Hiroshima and Nagasaki has been tested for number of excipients but as the most effective demonstrated the effects of the Shiitake fungus.
